Canadian Bacon and Asparagus Casserole

Originally featured in our own Serving Ideas and Recipe Booklet, this classic casserole has been served by our customers for generations. Harrington’s lean Canadian Bacon adds authentic smokehouse flavor that your holiday guests are sure to rave about.

2 lbs. Canadian Bacon
1 ½ lbs. fresh asparagus
1 cup milk
½ cup butter
½ cup flour
3 cups light cream
½ cup chicken broth
1 cup grated sharp cheddar cheese
Juice of 1 lemon
1 ½ Tablespoons grated onion
1 Tablespoon prepared mustard
1 Tablespoon minced parsley
salt to taste
1/8 teaspoon pepper
1 cup mayonnaise
¾ lb. spaghetti
Preheat oven to 350°F.

Cut Canadian bacon into ½-inch pieces. Create the sauce: Melt butter over medium heat. Blend in flour. Slowly add cream, milk and chicken broth. Cook until thickened, stirring constantly. Add cheese, lemon juice and seasonings. Remove from heat. Stir in mayonnaise. Steam asparagus until just tender. Cook spaghetti al dente. Drain and rinse. Mix sauce with spaghetti and bacon. Pour into a 4-qt. casserole, alternating sauce mixture and asparagus. Bake uncovered for about 30 minutes, or until bubbly. 10 servings.
